But a girls gotta have chocolate no?
Eating foods free of being processed is the order of the day. This works fine for breakfast, lunch and dinner– but what about dessert…
I ran across a recipe for fudge babies on the Chocolate Covered Katie blog. They looked to die for, so I made some– adding and adapting to my liking.
The result: heaven!
1/2 lb of good quality dates pitted
3-4 teaspoons of unsweetened chocolate powder (I used Now Organic)
2/3 a cup of raw cashews
1 tablespoon of coconut oil
1 tablespoon of natural peanut butter
Take all your ingredients and blend them together in a food processor. It will be a bit grainy looking, that’s ok. If it feels moist you can take them out and roll them into balls. Dust lightly with more cocoa, or omit this if it’s too bitter for you.
Eat, and repeat!!!
For all practical purposes this recipe is vegan, gluten free, organic, and if you are paleo you can trade the peanut butter for almond butter.
